I’ve always loved tostadas because they remind me of sunny days spent in Mexico, where I first tasted them at a little roadside stand.
The combination of crispy corn tortillas and fresh toppings just brings me so much joy.
Plus, they're super easy to make and perfect for using up leftover veggies.
Trust me, once you try these, you'll want to keep them in your meal rotation!

Ingredients & Substitutions
I love using corn tortillas because they’re naturally gluten-free and add that lovely crunch. You can also make your own if you’re up for it! For the refried black beans, I usually go for a brand that’s organic and free from any animal products. If you want to amp up the protein, feel free to add some cooked quinoa or chickpeas!
Tips & Notes
- •I like to keep my toppings prepped in little bowls so everyone can build their own tostada – it’s so much fun!
- •If you have leftover toppings, they make a great salad the next day.
Recipe Variations
- •Sometimes, I’ll add roasted corn or black olives for extra flavor and texture.
- •Feel free to switch up the beans – pinto or white beans work wonderfully too!
Storage & Freezing
These tostadas are best enjoyed fresh, but you can store leftover toppings in an airtight container in the fridge for up to 3 days. Just reheat the beans when you're ready to assemble more tostadas!
Frequently Asked Questions
Can I use flour tortillas instead?
Absolutely! Just remember they won’t have the same crunch, but they'll still be tasty.
What can I add for extra protein?
You could mix in some cooked lentils or even crumble some tofu on top. I love adding tempeh bacon for a smoky flavor!

Bake the tortillas in the preheated oven for about 8-10 minutes, or until they’re golden and crispy. Keep an eye on them!

While the tortillas bake, heat the refried black beans in a small saucepan over low heat, stirring occasionally.
- 5
Once the tortillas are out of the oven, spread a generous layer of the warm refried black beans on each one.

Top with halved cherry tomatoes, red onion, and avocado slices. Sprinkle with chopped cilantro and a squeeze of fresh lime juice.
