In a bowl, toss the chickpeas with olive oil and taco seasoning until they’re well-coated.

Spread the seasoned chickpeas on a baking sheet in a single layer and roast for about 20-25 minutes or until they’re golden and crispy.

While the chickpeas are roasting, prepare your corn tortillas. Cut them into quarters and arrange them on another baking sheet.

Once the oven is free, pop the tortillas in for about 10-12 minutes until they’re crispy and slightly golden.

Now it’s time to assemble your towers! Start with a crispy tortilla piece, then add a layer of chickpeas, followed by a sprinkle of plant-based vegan cheese.

Repeat the layering until you've built a mini tower—two or three layers is perfect.
