Vegan Marshmallows
These fluffy, homemade vegan marshmallows are so much fun to make, and they remind me of cozy nights by the campfire roasting marshmallows, minus the animal products.

I’ve always had a soft spot for marshmallows; the way they melt in your mouth takes me back to childhood camping trips with my family.
This recipe is my go-to for making vegan marshmallows that are fluffy and sweet, without any of the agar-agar.
I love sharing these with friends, especially when we’re making s'mores or adding them to hot cocoa.
It feels great to whip up something so nostalgic and plant-based!

Ingredients & Substitutions
Agar agar is a fantastic alternative to agar-agar, and it works best when fully dissolved in boiling water. Make sure to use organic sugar if you can, as some sugars are processed with bone char. The maple syrup gives a lovely flavor, but you can also use agave if you prefer.
Tips & Notes
- •I love to sprinkle a little cocoa powder in the cornstarch for a chocolatey twist when dusting the marshmallows.
- •Using a serrated knife makes cutting the marshmallows a breeze!
Recipe Variations
- •Sometimes, I’ll fold in mini vegan chocolate chips before pouring the mixture into the pan for a sweet surprise.
- •You can add a few drops of food coloring to the mixture for a fun, colorful treat!
Storage & Freezing
Store these marshmallows in an airtight container at room temperature. If they get a bit sticky, just toss them in a little more cornstarch. Enjoy your sweet creations!
Frequently Asked Questions
Can I use a different sweetener?
You can definitely experiment with other sweeteners! Just ensure they're liquid if you're replacing the maple syrup, or adjust the dry ingredients accordingly.
How long do these marshmallows last?
They usually last about 2 weeks stored in an airtight container, but they might get a little firmer over time. I keep mine in a glass jar to help maintain freshness.

Instructions
- 1
In a small saucepan, whisk together the agar agar powder and water. Bring it to a boil over medium heat, stirring constantly. Once it’s boiling, reduce the heat and let it simmer for about 5 minutes until fully dissolved.
- 2
In a large mixing bowl, combine the granulated sugar, maple syrup, and the dissolved agar agar mixture. Using a hand mixer or stand mixer, whip this mixture on high speed for about 10-12 minutes. You want it to become thick and fluffy.
- 3
Add in the vanilla extract and mix for an additional minute until combined.
- 4
Prepare a 9x9 inch baking pan by lining it with parchment paper and lightly dusting it with a mix of cornstarch and powdered sugar.
- 5
Pour the marshmallow mixture into the prepared pan, smoothing the top with a spatula. Dust the top with more cornstarch and powdered sugar.
- 6
Let the marshmallows set at room temperature for at least 4 hours, or overnight if you can resist!
- 7
Once set, dust a clean cutting board with the cornstarch and powdered sugar mixture. Carefully lift the marshmallow slab from the pan and place it on the board.
- 8
Cut into squares with a sharp knife, dusting the knife with cornstarch and powdered sugar to prevent sticking.
- 9
Enjoy your homemade vegan marshmallows in s'mores, hot cocoa, or just on their own!
